Lots of people ask me about acid/alkaline balance. The truth is, despite what some may say - almost all foods will either produce an acidic or an alkaline effect in the blood once they are digested and metabolized.
Since our blood is normally slightly alkaline, with a pH level of between 7.35 and 7.45, many nutritionists and health practitioners advocate eating a diet as close to the body’s ph level for optimum health. There are many charts and books that outline the pH of foods, and I have included a video below to help you better understand the concept visually.
An alkaline diet is thought to increase energy, decrease inflammation, and strengthen the immune system. A diet too high in acid may deplete the body of alkaline minerals such as potassium, magnesium and calcium. This imbalance is thought to make people prone to illness- or just feel poopy all around. Low immunity, low energy, arthritic pain and more...
As a very general rule...when digested - meat, poultry, fish, grains, dairy, and salt are acid producing, while most fruits and vegetables, sea vegetables and many other "healthy" foods are alkalizing (surprising?)
As our culture has moved from eating a diet high in fresh fruits and vegetables to a diet high in meat, dairy, grains, salt and sugar, the typical Western diet has become dramatically acidic- and along with that we have also witnessed sky rocketing illness rates, with more and more Americans on a lifetime of pharmaceutical cocktails.

Move over Iceberg...
This week, I wanted to write about the importance of dark (amazing and nutritious) leafy greens! I am not so sure people get as excited about greens as I do, but hopefully after reading this post you will be inspired to find the green chef hiding inside of you.
Americans consume (on average) over 150 POUNDS of sugar, vs. 8 pounds of broccoli per year! About 30-40 pounds of this said sugar comes from known sources (the treats we eat, sugar in beverages etc..) but the remainder of that number comes from sugar hiding in your diet. Yes, hiding behind words such as corn sugar (formerly known as High Fructose Corn Syrup), dextrose, maltose, any dairy ingredient and so many more is translating to your body as....SUGAR.
In my personal wellness program, I try to stress the importance of becoming a Food Detective. This simple tool alone will help shift your thinking and improve your health. All it takes is to read the ingredients list of what you are eating (not the nutrition label listing calories, protein, fat etc..the actual list of stuff) and ask yourself some questions such as:
• Do I clearly understand all that is listed on this label?
• Does the label have anything on it that I can’t pronounce?
• How many times is sugar listed on the label (look for the many names of sugar!)
• Are there "artificial" AND/OR "natural" flavors?
• Are there more than ten listed ingredients, and if so, how many are food based?
• Is soy listed as an ingredient (ie: soybean oil, soy lecithin etc.-if so, is it organic?)
Two very important quick notes (which I have written about before) but would like to stress:
1) If lemon, orange or berries were used in a given product, the label will read "lemon, orange or berries" NOT "natural lemon flavors". Note to self: “Natural flavors” are far from natural.
2) Soy is one of three top genetically modified crops in our country. At the levels in which we consume it and the way we consume it (young, unfermented, inorganic, GMO soy beans..) it is extremely toxic. Asian traditions consumed fermented soy, in limited quantities (which is in fact, actually healthy). However, we are getting a dose of this unhealthy form of soy in almost every single packaged product on the market- take a look at your labels to find out for yourself.
Now, I have digressed...back to the point of this blog: dark, leafy GREEEEENS
Dark greens you say? As in spinach? YES! Spinach as well as other beauties like kale, chards, collards...
Eating greens is a way to combat all the CRAP we consume daily. Even adding in one serving of dark green, daily can make a huge impact on your health. Dark, leafy greens are super rich in vitamins E, C, A, K, not to mention chlorophyll, fiber and more.
Dark greens help to detoxify the blood and help your body reduce acidity (caused by too much acid forming foods like sugar, meat, dairy...). Greens help to create a glowing complexion and can also help to thin the blood naturally. If you are like me, and suffer from menstrual pain eating lots of greens a week prior to your period will help to thin your blood, reduce bloating and ease the pain of menstrual cramps. (Necessary disclosure: If you are on any medications, especially blood thinners, make sure to discuss Rx reduction with your doctor!)
For these reasons and so much more. Dark greens are truly amazing. The green color itself represents life, spring, renewal. In ancient traditions such as Ayurveda, the color green is a symbol of balance and represents the Fourth Chakra (the heart Chakra) which governs our ability to live our life full of love! I like to imagine my greens as an internal rain forest for my body, so purifying and cleansing!
Below are 3 easy ways you can start digging into dark greens:
1) Add in 2-5 large leaves of kale to a berry, banana smoothie.
2) In your daily salads, make sure to chop up at least 1 large dark green and mix it in with the traditional, nutrition-less iceberg or spring mix base. Try to add more dark greens each time, until you have a dreamy green base.
3) Sauté some washed, chopped dark greens with lots of garlic and onions for a savory side dish!
Aim to try at least ONE of these things over the next week and you will be on your way to becoming a green machine!

Leave the Milk for the Cows

Looking to try a dairy alternative? I wanted to share my personal favorite with you:
COCONUT MILK!
Coconut milk is simply delicious. As a write this, I am enjoying a cup of organic coffee with organic coconut milk. I do not use sugar in my coffee, but the sweetness of the coconut milk adds a natural sweetness that is so YUM.
So why is coconut milk good for you?
Coconut milk is super rich in medium chained fatty acids. These are the type of fats that help your body produce energy, enhance your cell function and your overall metabolism. So, when you see the fat content on the jar of coconut milk, don't freak out!
These medium chained fatty acids (otherwise known as MCFA's) are not easily stored in the body, instead they actually help you to burn the stored fat we all try to get rid off before summer time :)
Coconut milk is good source of calcium, vitamin A, essential trace minerals, and folic acid (a B vitamin) which makes it a great choice for women of child bearing age** (see below)
Coconut milk also supports your immune system and is is cholesterol free. Preliminary research has also concluded that increased intake of folic acid may even reduce the risk of cancer and cardiovascular disease. Coconut milk is naturally gluten, soy and dairy free.
** Folic Acid is crucial to the healthy development of babies in early pregnancy because it helps to produce proteins needed for the synthesis of of DNA. Women in child bearing years should consume at least 0.4–0.5mg of folate daily
Here is a delicious and easy recipe for Coconut Carrot Soup for you to try:
Note: this soup is puréed in the blender at the end, so don't worry about chopping everything so much- it is a a huge time saver!
Prep and Cook Time: 30 minutes
Ingredients:
* 1 large onion, chopped
* 1 TBS + 3 cups vegetable broth
* 2 to 3 TBS fresh ginger, sliced
* 4 to 5 medium cloves garlic, chopped (I like using more garlic)
* 1 to 2 tsp curry powder
* 2 cups sliced carrots, quartered
* 1 cup sweet potato, cut into ½-inch cubes
* 5 oz canned organic coconut milk
* sea salt and pepper to taste
Directions:
1. Chop and prep your onion, garlic, ginger, sweet potato and carrots as stated above
2. Heat 1 TBS broth in a medium soup pot
3. Sauté onion in broth over medium heat for about 5 minutes, stirring often
4. Add garlic and ginger, continue to sauté for another minute
5. Add in your curry powder and mix it up
6. Add in the 3 CUPS broth, carrots, and sweet potato
7. Simmer on medium high heat until vegetables are tender (about 15 minutes)
8. Add in the coconut milk (yummmmm)
9. Using a blender, blend the soup in batches
(make sure blender is not more than half full to avoid burns from the hot liquid!)
10. Return each blended batch to the original pot and reheat until all soup is blended.
sea salt and pepper to taste

FOODS that reduce pain, fever and flu symptoms

We have all been there…sick, achy, fever…
I used to be the type that reached for all medicine that promised to cure any of my ailments. If it read “relief from xyz”, I took it.
As I started to explore food as medicine, I experimented with curing myself from colds and flu naturally and was amazed at how much faster I recovered. Here are a few tips that I wanted to share with you.
If you feel pain:
Omega- 3 rich food sources such as wild salmon, fish stock, walnuts, flax seeds and high quality fish oil supplements significantly help to reduce inflammation in the body.
Full of antioxidants, vitamin C is still atop the list when you’re feeling under the weather. Antioxidants help to protect the body from free radicals and also help to build your immune system. However your main source of vitamin C should NOT be supplements. Instead, reach for an orange, squeeze some lemons in your water, or have some strawberries and papayas. These fruits will also help to reduce inflammation and cool down the body.
Other medicinal fruits to ease pain include apricots, organic red apples with the skin, dark colored grapes, blueberries, and watermelon. Certain spices such as ginger and turmeric have also been shown to reduce pain associated with inflammation.
If you feel Flu-ish or have a viral infection:
Garlic, onions, ginger and oregano are wonderful antibiotic/antiviral foods. Load up on these foods or use them in teas. For example: you can chop up some fresh ginger, lemon and garlic and steep into hot water, drinking frequently throughout the day.
Quality essential oils such as: oregano, tea tree, thyme, and eucalyptus lemon oils can also assist your body with recovery. Adapted from Dr. John Christopher (a renowned herbalist) and from Paul Pitchford’s “Healing with Whole Foods” here are a few essential oil recipes:
1. Antimicrobial essential oil combination: 1 drop tea tree oil combined with 1 drop each of thyme and eucalyptus oils, in water
2.For flu: 1 drop clove oil combined with 2 drops lavender oil, in warm water
*dosages may need to increase up to once every ½ hour depending on severity of illness
If you have fever:
In addition to all of the above recommendations, if you have a fever, here are a few more tips to follow:
Drink as much liquids, especially as much water as you can (remember to squeeze some lemon juice in it)
Try to avoid solid foods until your fever is gone, this will help your body preserve energy. Instead try juicing the fruits mentioned above.
While zinc has been shown to reduce colds and assist with immune function, avoid taking any zinc supplements when a fever is present. When your body is overheated, zinc is really difficult for the body to absorb. (Zinc molecules are larger molecules, that’s why if you have ever taken too much, or on an empty stomach, you feel nauseous)
Allow your fever to exist, your body is eliminating the toxins its needs to expel *however, fevers over 102 should be taken much more seriously and be monitored closely by a doctor.
Take frequent lukewarm-cool baths, or use cool wash clothes to cover your body (doing this repeatedly will assist your body in reducing its temperature).
If you do consume food, try to have fruit especially some apricots and grapefruit (which have been shown to reduce fevers)

Have you have seen “Goji berry juice” in the store or advertised somewhere in your area and wondered what these “berries” are and why they are so good for you?

1/2 tsp orange zest

Best Wrinkle Defense- Eat Your Apples
Phytonutrients protect plant life from various environmental challenges such as UV sun rays, toxic chemicals, high heat and general poisons or pollutants in the air or soil. Also known as phytochemicals, they are nature’s natural defense and help to form part of the plants immune system. Unfortunately, our human body doesn’t naturally produce these phytonutrients leaving our cells unprotected from certain toxins, pollutants and other environmental stressors. Exposure to these toxins creates the potential for what are known as free radicals in our cell systems. With this definition in mind, imagine a “radical” atom inside your body overthrowing the social order of all your cells.
Scientific investigation of phytonutrients is a very exciting area of nutrition research today, as we are now obtaining science-based explanations as to how plant food supports and protects our overall wellness. Natural Ways to Prevent and Manage Arthritic Pain
Arthritis is a leading cause of disability for people over the age of 15, and is an umbrella term for over 100 types of arthritic conditions. The most common type of arthritis, osteoarthritis, occurs naturally with age, leaving us all susceptible to the affects of arthritic pain. Life style changes and diet can slow down the deterioration of joint materials, as well as greatly assist those already suffering with the disease.
Arthritis occurs when the cartilage and the synovial fluid (nutrient rich joint lubricant) begin to deteriorate, leaving no buffer between the bone ends in a particular joint. A Look At High Fructose Corn Syrup
What could tomato paste, chocolate milk and cold medicine (amongst countless other supermarket products) potentially have in common? The answer is corn, and more specifically, High Fructose Corn Syrup (also known as HFCS). Perhaps you have seen the ads for HFCS or maybe you have spotted this commonly used ingredient on your food package. Some believe that HFCS is a contributor to the growing rate of obesity and type 2 diabetes in our country. While others, including the FDA, claim it is a completely safe product to consume. What are the facts about HFCS and should you eat it?
HFCS is made (in brief) by processing corn starch to corn syrup and further processing that corn syrup using genetically modified enzymes. This enzymatic process yields a high fructose mixture, to which additional corn syrup is added, ultimately creating what we know as a high fructose corn syrup (HFCS). Despite the lengthy process to make it, HFCS was invented as a cheaper alternative to sugar and is now used in countless processed foods. It is an estimated 30% cheaper than the cost of both honey and sucrose, with the added benefit of extending the shelf life for many products. This economic advantage of HFCS has been credited to our government subsidy programs for corn farmers. Many believe that this constant (and arguably excessive) supply of corn greatly helps to suppress the cost of HFCS for major food companies.
When consumed in moderation, sweeteners such as fructose, glucose or sucrose won't necessarily hurt you. At the very least, it is argued that many foods containing HFCS are high in sugars and lower in overall nutritional value, which can on the most minimal level compromise nutritional needs in exchange for empty calories.
Perhaps the policy in which the food industry thrives, the over-consumption of food and a life style that has grown so fast have all contributed to the birth and growth of High Fructose Corn Syrup. It is up to you to look at the label of what you eat, chances are you will find an ear of corn somewhere in the ingredients.

DEVIL IN DISGUISE -watch out for what you are being sold
Yesterday, was a historical day for frontline news, I picked up the Wall Street Journal on way to work. Sat on the train, reading, smiling...a day in history we will all remember.
I turn the page to reveal a full color advertisement for Monsanto which reads:
"How can we squeeze more food from a raindrop?"
There are three full color pictures on the ad, one of corn, one of soy and one of a raindrop on a corn husk.
And here is an excerpt (full ad attached):
"Farming feeds the world, but it depends on vital natural resources....we'll need to get more from each drop of irrigated water...we'll also need to do more with the solution nature already provides: rain...that requires advanced hybrid and biotech seeds that ...can help farmers use 1/3 less water per unit...conserving more...sustainable agriculture...that's what Monsanto seeds are all about".
UM, ....WHAT?.....
After I picked up my jaw and got over my shock, I started to seriously worry. Worry more than I ever have about GMOs, about Monsanto and what they are doing with their power. Monsanto has taken the development of hybrid and genetically modified seeds to crazy new heights, is now 'selling' them as a better option for the environment. Oh, that makes cents. (mis-spelling intentional)
What about the many fertilizers and pesticides NEEDED (I repeat, needed) to make these seeds grow? How do they affect the environment? The ocean and marine life? How do these chemicals (which kill the nutrients within our soil) constitute as "sustainable agriculture"? These seeds could grow in the desert with practically no water at all! (and I am not joking).
Score for Monsanto for being able to "patent" mother nature and get away with it-but I ask again, what are these seeds exactly? Mutated plant DNA? Petrochemical? A little of both actually, but I will get into that another time. The bottom line is that "terminator seeds", "GMOs" and frankenfood of the like... are certainly NOT natural. It is crazy to think these seeds and crops do not and will not affect our bio-chemical makeup and more important, the future of our planet.
DO YOUR PART
I urge all of you to take a look at this ad and think about what Monosanto is slowly doing to our food- and to our world. Corn and soy are two of the top GM (Genetically Modified) two terminator crops that started with Monsanto...Round-up ready...anyone? Monsanto is spreading like wild fire. In fact, the world is already burning. They have invaded our domestic farms, and aim to modify and reproduce crops from all over the world, breaking down the livelihood and ecosystems of those farmers too. All the while convincing the world that they are doing something good. It is dispicable.
I wonder where the point of corporate responsibility will kick in...cause we we can't hold our breath for the FDA to take public safety seriously. We need to educate ourselves and see through fancy ads like these that claim Monsanto is doing 'good things' The entire Monsanto website is a complete spin on their very-very-very bad industry (hey, it's my blog) and this new campaign, launched this past Septmber (www.ProducemoreConservemore.com) is VERY scarey. YIKES!
It is so important for our future that you become familiar with GMO's, Monsanto and the affects on our health and future.

The benefits influence your health today—and long-term. Here, why certain foods are worth the splurge, plus tips to save you money while keeping your diet nutritionally and ecologically sound.

Research in rats found that those fed an all-organic diet (versus conventional food) had lower weight, less body fat, and a stronger immune system. Plus, the "clean diet" animals were calmer and slept better.

The most important fruits and vegetables you should buy organic are those with the greatest pesticide residues, and the ones you eat most often. Government lab tests show that even after washing, certain fruits and vegetables carry much higher levels of pesticides than do others. Between 2000 and 2005, the not-for-profit Environmental Working Group (EWG) analyzed the results of nearly 51,000 tests for residues on produce. Based on the data, they created a "dirty dozen" list of the most contaminated fruits and veggies. It contains 75 percent more beta-carotene, as much as a serving of brussels sprouts.
It has 50 percent more vitamin E, a powerful antioxidant that aids the immune system and fights cancer and heart disease.
It provides 2 to 3 times the antioxidants lutein and zeaxanthin, and about 70 percent more omega-3 fatty acids.
Organic milk also contains more conjugated linoleic acid. This good fat has been linked to numerous health benefits, including stronger immunity, less belly fat, a lower risk of type 2 diabetes, and healthier arteries.
Like meat, organic dairy contains no hormones or antibiotics, and there are no pesticides in the cows' feed. (In 2005, diphenylamine, a pesticide residue, was found in up to 92 percent of more than 700 conventional milk samples.)
Meat and poultry
A study in the journal Meat Science compared the nutritional content of organic and nonorganic chicken meat. The researchers found that the organic samples contained 28 percent more omega-3s, essential fatty acids that are linked to reduced rates of heart disease, depression, type 2 diabetes, high blood pressure, inflammation and Alzheimer's disease. Animals raised organically can't be given antibiotics or growth hormones.

Please read this very important message
New Jersey residents and other concerned citizens -- take action now for your freedom to speak about nutrition.
The ADA has worked state-by-state to pass turf legislation that excludes everyone except registered dietitians from giving nutritional advice. They've now moved into New Jersey.
The ADA's mission is to serve the public as "the most valued source" of good advice about food and nutrition. But did you know that this "valued" nutrition resource receives substantial funding from fast food corporations? That is correct...the ADA receives more than $3 million from Wendy's, McDonald's, PepsiCo, Taco Bell, Hershey's and more, annually.
It is crazy that fast food Big Business has become the voice for our health - and the ADA. How can they say that they have our best health interests in mind? Unfortunately, "basic" "real" foods have no Big Business marketing, only pure mother nature and the ADA needs money. On the ADA website you'll find tips on how to make a family dinner healthier-sponsored by Wendy's! Um...can anyone say, conflict of interest?
If this bill passes, millions will be impacted. Dr. Neal Barnard, founder and president of Physicians Committee for Responsible Medicine says:
"If standardization of the nutrition practice is left in the hands of a single professional organization, the potential bias caused by financial arrangements raises important questions. It is a dangerous mistake to establish in law a monopoly on nutritional counseling."
Dr. Michael Jacobson, executive director of the Center for Science in the Public Interest says:
"I'm very troubled by laws that prevent anyone -- including professors of nutrition -- from giving nutrition advice, unless they are registered dietitians."

The ABC's (otherwise known as 4-8-9's) of your fruit and veggies
You know that itty bitty white sticker you peel of your fruit or vegetable before eating it? We don’t think about it as an important label, but there is a wealth of information on that little tag. This tag is the way in which our Department of Agriculture categorizes our produce, according to food standards.
If the number on your sticker starts with a 4 (ex 4182) that fruit or vegetable was a "conventionally grown" item. Conventionally grown, means that the farm your food came from could have (and most likely) used some form of fertilizers, herbicides or chemicals. It is argued that some of these agents have potentially toxic repercussions (to both you and to the environment). Farmers use these products to enhance the yield of their fruits and vegetables, and to keep insects from eating their crops. The chemicals in some of these farming agents have been shown to harm our ocean and marine life, due to run-off into our water streams. Some disagree and believe that these agents are safe. If the number on your little label starts with a 9 (ex 94182), than that particular fruit or veggie is an "organically grown" item. Organic farmers do not use harmful chemicals or fertilizers to enhance their crops. They can by law, use some environmentally safe sprays both before and after harvest. These agents are less toxic and the safest for the environment and our bodies. Organic is a great choice if you want to consume the purest, most untouched fruit or vegetable available. You may notice in some cases that organic food is smaller, perhaps not as bright in color, or maybe even colorless compared to their conventionally grown neighbors. This is often because the chemicals sprayed on other categorized crops can artificially enhance their size, shape etc… Stated simply: Organic foods are in the most natural state possible with no added special effects!
*Try an at home taste test with one conventional apple and one organic apple, I found the organic fruit superior in flavor, despite the color and size of the conventional fruit, very interesting.
Last but most importantly, if your label starts with an 8 (ex 8412) that particular produce was 'built' using some genetically modified process or modified seeds (often known as hybrid and/or terminator seeds) and generally known as GMOs. I say 'built' because although it is technically grown (aka: comes out of the earth) it has a different starting point than the traditional seeds used in agriculture. Genetically modified seeds are created by using “DNA molecules from different sources, combined into one molecule to create a new set of genes, which is transferred into a new organism, giving it modified or novel genes.” (Source, Wikipedia).
GMOs are used because they seemingly produce a stronger looking crop (in size, shape, consistency) and can offer built in pesticides within the seed nucleus. The trick played on farmers, is that many seeds can not be re-cropped as they are a one time, one use product, keeping the farmer residually tied to this growing agribusiness. Genetically Modified Foods have been banned for many years in Europe and are a complex and controversial subject in our food supply. If the number on your little label starts with a 9 (ex 94182), than that particular fruit or veggie is an "organically grown" item. Organic farmers do not use harmful chemicals or fertilizers to enhance their crops. They can by law, use some environmentally safe sprays both before and after harvest. These agents are less toxic and the safest for the environment and our bodies. Organic is a great choice if you want to consume the purest, most untouched fruit or vegetable available. You may notice in some cases that organic food is smaller, perhaps not as bright in color, or maybe even colorless compared to their conventionally grown neighbors. This is often because the chemicals sprayed on other categorized crops can artificially enhance their size, shape etc… Stated simply: Organic foods are in the most natural state possible with no added special effects!
*Try an at home taste test with one conventional apple and one organic apple, I found the organic fruit superior in flavor, despite the color and size of the conventional fruit, very interesting.
Last but most importantly, if your label starts with an 8 (ex 8412) that particular produce was 'built' using some genetically modified process or modified seeds (often known as hybrid and/or terminator seeds) and generally known as GMOs. I say 'built' because although it is technically grown (aka: comes out of the earth) it has a different starting point than the traditional seeds used in agriculture. Genetically modified seeds are created by using “DNA molecules from different sources, combined into one molecule to create a new set of genes, which is transferred into a new organism, giving it modified or novel genes.” (Source, Wikipedia).
GMOs are used because they seemingly produce a stronger looking crop (in size, shape, consistency) and can offer built in pesticides within the seed nucleus. The trick played on farmers, is that many seeds can not be re-cropped as they are a one time, one use product, keeping the farmer residually tied to this growing agribusiness. Genetically Modified Foods have been banned for many years in Europe and are a complex and controversial subject in our food supply. This naturally occurring seed selection, created a genetic diversity of crops that enabled them not only to store seeds for future harvest but also share with other farmers for years to come. These organic seeds ("organic" in terms of purest in nature) have the figurative DNA of hard working farmers from centuries past that have mindfully cultivated their harvest, noting flavor, color, harvest strength and reaction to specific farming conditions. Farm assisted Darwinism in action, if you will. The strong seeds survive and are planted again, traded, stored and rotated with other strong crops. Basic farming.
Through centuries of this hard work, our farming fathers have made a viable and intangible agribusiness from this practice. Building a strong, natural and invaluable commodity. Seed trading made crop diversity readily available, enriched soil, thereby increasing nutritious value of the end product, sustained food supply, expanded crop yields and increased profits for the worldwide farming community. Notably in third world countries, where farming is a major contributing source to GDP and sustainability on both economic and personal scales.

In 1970 the U.S. Plant Variety Protection Act was passed. This act enabled and offered opportunities for seed profit and created the incentive for corporate interests to take control of and expand the seed industry. In essence, Big Business was given the "intellectual property" rights to seeds and started to work like busy bees in their science labs, cloning mother nature.
Somewhere along the blurry line, we became a culture focusing far away from the roots of our existence, literally. Mom and pop farms being stomped on by bigger business is perhaps, an inevitable truth of capitalism. We are now accustomed to the convenience and vast variety of foods found in any grocery store. We can have fruits that are out of season at our fingertips (coming from warmer climates) and vegetables from around the world. Partially in thanks to large seed companies that have made a business from selling and distributing seeds to farmers around the world.
The problem is not with this concept, but with what happened thereafter. (Enter: Hybrid seeds) Hybrid seeds by definition are the first generation offspring seed of two distant parent lines of the same species. Man-produced inbred seeds were the platform for the commercial seed market. (Think Wal-Mart of seed distributors) With this technology, farmers were persuaded and in some cases forced to replace the traditional farm saved-seed with the new hybrid seed. This new species of seeds, gave a (perceived) benefit to both farmer and seed producer.
The farmer: achieved stronger yields, brighter colors, and the biggest sized crops. The seed manufacturer: keeps that farmer as a repeat customer. Why? Because the farmer can not utilize the seeds from the hybrid crop to reproduce another harvest- ever again. The hybrid seed will not "breed true" and will not perform at all (or nearly as well) if it were to be saved and replanted. Cross-polination of hybrids into the other 'natural' seeded crops on the farm would inhibit growth (of those crops) and mutate natural seeds. In addition, reliance on hybrid seeds created a dependence on fertilizer (a necessary component for modern hybrids to flourish at peak success and a subsidiary business of seed manufacturers). Thousands of years of evolution, a natural seed diversity and natural tolerance for localized growing conditions, slowly being lost. Farming practices which began in the nineteenth century, vanishing before our very eyes. Modern day seed companies have managed to capitalize-on and trade-mark mother nature.
The Global Effect:
Hybrid seeds have forced many of our world's farmers, especially in poor countries, deep into a debt cycle. Modern farming practices have drastically increased cost for seeds and agro-chemicals (an estimated 100% increase in farming cost since 1970). Small farmers in countries outside the U.S. are sometimes forced to switch to the hybrid option, so that exports can compete with the appearance of a stronger crop. In some cases, it is our own government that is buying up and using the land in other countries to make more and more food, or more and more commerce depeneding how you view it. It is the death cycle of farming.
Despite the abundance of food, what is the cost to our farmers and to our future? The estimated $30 billion dollar global seed trade is now dominated by a handful of corporate giants. The nutritious value of these crops inevitably declines, the soil is not being cultivated, crops no longer need to be rotated. Hybrid seeds will grow in any soil, given the proper fertilizer. And what in turn are we eating? Fertilizer? Petrochemical?
Given the increased farming costs, the government has created farming assistance programs. These programs are the 'largest corporate welfare programs' ever imagined as they keeps most farmers just above the poverty level. Providing subsidies to them for things that only serve "The Market" and not the farmer. "Farm subsidies are distributed not on the basis of need, but with regard to two other criteria: (1) the type of crop grown, with 90 percent of all farm subsidies awarded to farms that produce wheat, corn, cotton, rice and soybeans,3 and (2) the amount of crops grown, with farmers who grow more crops receiving higher subsidies. Therefore, large farms and agribusinesses--which, as a result of economies of scale, are also the most profitable farms--are eligible for massive subsidies as long as they grow the crops the government wants them to grow. Meanwhile, small lower-income farms growing the same five crops receive only a fraction of what large farms receive; and farmers planting the 400 other crops, regardless of their need, are completely excluded from most farm subsidies." When you have this information and then think about why the government only subsidizes certain crops, it is almost transparent to see- to increase revenue on many cyclical fronts (Pharmaceutical, Agricultural, Big Business). It is a scary thought to know that capitalism has triumphed over the human race. Things like corn and soy (two products that receive 80 percent of all herbicides used in the entire United States) and as you now know, the greatest farming subsidy, account for today's main feed source for factory cows . Although one may think this is a natural option for a cow's diet- it is not. Cow's were intended to eat grass, they have a Ruminant Digestive System different from other animals. So this feed is making our cows sick, in turn increasing the need for antibiotics, therefore contributing to antibiotic resistant disease, pollution, amongst many, many, many other problems. In some cases, you need more than a $1.00, organic is expensive! But the cost of supporting hybrid and conventional farming methods are risky and in long run, could cost us everything.

Vote at your grocery store- every week
The price of organic food is sometimes double that of their conventionally grown neighbor. It is challenging, especially in today's economy to spend almost double on our weekly produce just because we are choosing organic. It is important to remember that voting with your dollars is not only essential to change, but essential to your health. Choosing organic foods is choosing change.
Let's start with the basics:
You plant a seed and watch it grow. What are the 'living' conditions of that seed? Soil is a living, fragile and complex ecosystem that is the connection between the air we breath, our land and our water. As you read in my previous post, current day farming practices ie: using pesticides, hybrids, soil enhancers and other chemicals are dangerous and have huge repurcussions.
These practices make it easier, faster and arguably more productive than using good old fashioned farming methods such as general crop rotations (which help to enrich nitrogen in the soil and avoid pathogen build-up) and the use of mulch and manure to eliminate weeds. I don't blame anyone for trying to get more bang out of their buck, I will simply pass on the chemicals in my food, thanks.
So one may say..."What's wrong with a little insecticide, herbicide or fungicide?"
Aside from the direct affect on our food chain (more on that in a different post), there is a chain affect on our environment - and potentially our immediate health.
Since man-made pesticides are regulated by the U.S. Department of Agriculture. One may assume they would safely control the amount of poison that can be applied on our food crops (is that an oxymoron?) This belief takes the assumption that investment by big business, consumption by consumers, government spending, subsidy farming, capitalism, economy, GDP...all step aside so that the USDA's can protect your individual health. Um....maybe.
Keep it basic and do your best to support the farms that believe in the integrity of the crops they produce, sans chemicals, and over-production for intentions other than pure cropping. These are the people looking out for you and our world.
Eat with your head:
Does wax on your apple feel good in your mouth? I mean, you know that can not wash that off...Does a huge watermelon without one single seed seem even a little odd? Or a perfectly round, bright, larger than a softball orange? Doesn't it just seem a little wierd? I think our society has been drowned with competitive choices and our internal guidance has been muted. Time to wake up!
Choosing fruit with nothing on it or in it but the natural compounds it is made from, makes sense. Eating (even a lil wee- bit) of man made chemicals does not. When it comes down to conventional vs. organic, we are paying less (for the conventional option) because the end product is less laborious, less nutritious.
It is all choice. Eat with your head, and vote with your dollar.

Choose Food Wisely- Save the World
Each time you make a choice about what to eat, THINK not only about the direct impact it will have on your body and health...but also on our world. Yes, your choice affects our entire world.
So you may think...just how is this so? Here are a few brief points to ponder:
FAT:
Over consumption of fats will react and "oxidize," turning into compounds that can lead to heart disease, cancer, and other degenerative diseases. Although there are healthy fats, processed food fats otherwise known as "hydrogenated fats" are the worst. If you need one fat to stay away from for the rest of your life- this is the one!
This man-made process takes vegetable oil from a liquid to a semisolid fat and was designed for increasing shelf life and product stability. The trans-fat that is created ("trans" is the pre-fix because of the the "trans" chemical structure) is just as bad, and arguably worse than saturated fat. Choosing foods that use this process sends a statement to big business that we will allow such ingredients to lace our food choices.
BUY LOCAL:
Buying produce that is farmed in California (when you live in NYC) means that you are contributing to fuel pollution and rising fuel costs. Buy produce that is farmed locally. Not flown in on a 747 from across the country- or world! This not only helps our local business, but reduces your carbon footprint.
THINK BEFORE YOU (M)- EAT:
If you eat meat, buy meats that are organically fed, live free-range, are raised without antibiotics and most important- consume the natural diet for their species. Here are a few brief points to keep in mind:
WHAT ARE THEY EATING?: Today's factory cow is fed a diet of grain, and "other things" that a cow is not naturally able to eat. Things like protein substances (sometimes from other animals), corn and soy (two products that receive 80 percent of all herbicides used in the entire United States!) are todays factory cow's feed.
Something else to consider- According to a recent article in US News & World Report: some '40 billion pounds a year of slaughterhouse wastes like blood, bone and viscera, as well as the remains of millions of euthanized cats and dogs passed along by veterinarians and animal shelters, are rendered annually into livestock feed.' If you research this topic, you will find an over-whelming amount of information. This is not propaganda.
OUR WORLD: There are massive amount of waste produced on a factory farm today. You may think that animal waste is good (as manure) for the environment and in the case of the small farm, it is.
But with large farming facilities (where most of our dairy comes from) we are talking about massive amounts of waste - fecal ponds if you will - devastating the surrounding environment. There are cattle lots in California where confinement farming operations create as much waste as a city of 21 million people- all in one location. Imagine what that is doing to the surrounding environment, our lakes, rivers and streams.
Last, the growing problem we have with antibiotic resistant diseases in today's world is directly related to these large farming cattle lots. Cows get sick from not being able to digest the feed and from the poor living conditions (so heavily polluted with fecal matter). Therefore, today's mass-farming methods consist of a daily dose of antibiotics to aid in preventing illness. Due to these heavy doses of antibiotics your steaks and burgers, chicken and hot dogs, are all laced-up with antibiotics. Milk has been noted to contain traces of up to 80 different antibiotics, depending on the farm and location.
If you really want to boggle your mind, start realizing the connection between government backed programs related to such industry practice and how they may connect into many of our global problems. (...corn farming subsidies... crop exportation..terminator seeds...the pharmaceutical industry...the food pyramid...)

A little Nugget of Information
Developed by the Environmental Working Group, the 'Dirty Dozen' is a list of fruits and vegetables most highly contaminated with pesticide residues. When you are unable to purchase all your produce organically-grown, this list is a great tool to help you minimize your intake of pesticide residues by avoiding those foods highest on the list.
The Environmental Working Group's simulation of consumers eating high and low pesticide diets showed that it is possible to decrease exposure to pesticides by 90% by avoiding those foods that are the most highly contaminated and selecting those that are the least contaminated.
The Dirty Dozen - 12 Most Contaminated Fruits and Vegetables:

Apples 89
Sweet Bell Peppers 86
Celery 85
Nectarines 84
Strawberries 82
Cherries 75

Grapes (imported) 65
